Bite-sized Fruit Pizza Recipe

Here is a simple, tasty recipe I whipped up for the baby shower. I've always thought Lisa was so clever for putting cut-outs in muffin tins for these kiwi tartlets. So, I adapted the idea for these mini fruit pizzas.


Ingredients:
Sugar cookie dough (buy pre-made or try my recipe)
1 pkg. cream cheese, softened
1 container cool whip
1/2 c. powdered sugar
lemon juice
strawberries & kiwis

Cut your sugar cookies out and place them in muffin tins. Bake until golden brown. Set aside to cool. Mix together cream cheese, cool whip, powdered sugar & lemon juice (I used half of a lemon). Put inside the sugar cookie crust. Right before serving, top with sliced kiwis and strawberries.

    1. Awesome! I just realized I should have mentioned that the cream cheese should be left out for a bit before mixing. The consistency will be smoother if the cream cheese is about room temperature.

  4. Love this recipe!! I’ve made the full size one many many times! I recently just made mini ones for a friends bridal shower! They turned out so well, I just baked them a little less time so they wouldn’t burn but they turned out beautiful!!
